reasons for temperature drops in the roaster
endurance of roasting, interruption of the roasting process
heat diffusion through the bean
roast depths, roast intenseness and colours
observable changes of the bean during the roasting process
chemical changes in the bean during the roasting process

examples of different roast depths 
16.30h - 17.30h  Types of Quentschen (cooling) and its influence on the roasted coffee and the taste
water cooling (various types)
