5-day workshop: green coffee - roasting - cupping

The process of roasting is the upgrading for the green coffee - or its extermination. The chemical process during the roasting bring out all the characteristic flavours of the coffee which we appreciate so much. To protect the coffee from loosing its flavour you need to know in which kind of package and how to storage it. Additional to all these points you need a high qualitiy green coffee for a perfect cup.

During the roasting workshop you get a theoretical and practical insight into preocessing, the quality of green coffee and the roasting process.
So the content of teaching comprises processing, screening, transport and storage of the green coffee uo to various roasting processes and professional cupping of the own coffee roast.

After all we have a closer look to the German coffee market: what is specified by the food regulation, what is about the package and the best before date.

Course instructors are Alfons Schramer (coffee roaster) and Dr. Steffen Schwarz

1. Day Roasting Workshop:
Green coffee (processing, defects, transport - supply chain, storage) - roaster (mode of operation, accessories) - types of roasting

2. Day Roasting Workshop:
Roast technique (Theoratical basics and appliance) - roast depths

3. Day Roasting Workshop:
Cupping of the previous day roast - espresso roast

4. Day Roasting Workshop:
Organoleptic test - cupping - ageing, storage and package of roasted coffee - aromatisation

5. Day Roasting Workshop:
Roasts (single origin, blends) - cupping - blending

The number of participants is limited to 8 persons. You can only book all 5 days, no single days of the workshop. The price is 1.900€ per person plus 45€ per person and night (including breakfast) for lodging in a hotel near Castle Niederweis. The price for the workshop includes lunch but not dinner.
